Updating to the latest version of WP involves some clever trickery:

1. You have to connect your WP7 device to the Zune software, select it and then go to settings and then update.
2. Once you get the message that there is not an available update, just pick any of the options above or below the word Update (linking, sync.. etc). Then select update again.
3. Wait for a second or two and disconnect your Internet connection (I simply unplugged my LAN cable). If you have got the timing right, Zune should tell you that there is an update waiting at which point you reconnect to the web and you can go through the update process.
